Seven courses, one journey
Anima is the tasting menu that captures our vision of contemporary Tuscan cuisine. Every course is built in relation to the others — nothing is arbitrary, nothing exists in isolation. Chef Leonardo Fiorenzani designs each path starting from the raw ingredients of the territory and from his close work with small local producers, building an experience that lasts roughly two and a half hours and reveals itself gradually, course by course.
Served exclusively for the entire table, Anima is the menu for guests who want to give themselves over to the kitchen completely — to be guided through the flavours, techniques and contrasts that sit at the heart of what we do.
The seven courses
Fior di Cavolo
Cauliflower — beetroot — sesame
The opening course: a balance of vegetal bitterness, earthy sweetness and toasted notes that prepares the palate for what follows.
Oriente
Tagliolini — vanilla — tea
Our signature dish. Hand-rolled tagliolini made with toasted barley flour, finished with butter emulsified with vanilla bean and accompanied by a dual extraction of Lake Garda herbal tea — one cold, integrated into the dish, one hot, served at the table as a moment of transition. A reading of vanilla as a spice, not as a dessert ingredient.
Chianina
Cured beef — capers — raspberry — pomegranate
Tuscan beef cured in-house, with sharp and sweet contrasts that point back to the territory in a contemporary register.
Mare
Margherita rice — sea urchin — grapefruit
Where inland Tuscany meets the sea: rice carrying the salinity of sea urchin against the bright bitterness of grapefruit.
Passato e Futuro
Cappelletti — distilled broth — pecorino
A tribute to tradition, rebuilt through the technique of distilled broth: the memory of Tuscan filled pasta meeting the clarity of a transparent consommé.
Piazze d’Italia
Pigeon — plum — XO sauce
The most structured meat course of the menu: pigeon prepared with care, softened by plum and lifted by XO sauce — an international reference that converses with Italian tradition.
Zola
Blue cheese — coffee — chocolate
The closing course: a dessert that plays on the line between sweet and savoury, with the character of blue cheese, the bitterness of coffee and the depth of dark chocolate.
Wine pairing
Anima can be paired with a wine selection curated by our sommelier Michela Bigio. Two options are available, each built to dialogue with every individual course and to accompany the menu in its entirety.
- Standard pairing: €60 per person
- Premium pairing: €80 per person
Our cellar reflects our philosophy: Italian wines with a particular focus on Tuscany, labels from small producers and international selections chosen for coherence with the kitchen — never as filler.

To ensure the experience meets your expectations, please let us know about any allergies, intolerances or dietary needs at the time of booking. We adapt the menu where possible, while keeping the structure of the tasting experience intact. Allergens present in each dish are indicated on the menu in line with EU Reg. 1169/11.

Anima is available for the entire table by reservation. We recommend booking a few days in advance: we serve a maximum of 15 guests per service — a deliberate choice that lets us maintain the level of care and detail this menu requires.

Anima is our most complete experience, but not the only one. For guests who prefer a shorter path or an entirely plant-based menu, we offer two alternatives — both served for the entire table.

- Terra — vegetarian, 5 courses, €70 — a fully plant-based menu built around the garden and our local producers.
