RICORDI is the tasting menu that captures the essence of La Sosta del Cavaliere: a five-course path where Tuscan tradition meets the contemporary vision of Chef Leonardo Fiorenzani. Each dish is a fragment of memory — the flavour of a childhood spent in a grandmother’s kitchen, the echo of a territory, the signature of a technique studied for weeks before it reaches your table.

Why we called it RICORDI
Chef Leonardo Fiorenzani learned to cook in the kitchen of his grandmother Loriana. The aromas, the hands working dough, lunches prepared for one or for ten unexpected guests: that is where his cuisine was born, and that is where this tasting menu was born. Ricordi means memories in Italian.
RICORDI is not a nostalgic recreation of Tuscan tradition. It is a dialogue: we take the flavours of collective memory — the raw materials of our territory, the techniques learned within the family — and we reinterpret them through the language of modern cuisine. The result is an experience that feels both familiar and surprising at the same time.
Five courses, designed to build a progressive emotion: each dish finds its precise place in the journey, in balance with what comes before and what follows.
The tasting journey
FIOR DI CAVOLO
Cauliflower, beetroot, sesame
The opening course. A humble vegetable from the Tuscan countryside tradition is transformed into a chromatic and sensory experience: cauliflower meets the earthy sweetness of beetroot and the toasted note of sesame. A doorway that says everything about the philosophy of RICORDI — starting from what we know to arrive somewhere we have never been.
DOLCE AMARO
Sweetbread, coffee, pecorino, tangerine, hazelnuts
The quinto quarto — one of the most deeply rooted traditions of Tuscan cuisine — meets coffee and tangerine in a play of contrasts that is the very signature of the dish’s name (sweet-bitter). The sweetbread, worked with precision, becomes the centre of a rare balance between sweetness, bitterness, and savouriness. The pecorino and hazelnuts anchor the dish to the territory.
MARE
Margherita rice, sea urchin, grapefruit
The Margherita rice — an Italian variety cultivated with care — meets the deep iodine of sea urchin and the vibrant acidity of grapefruit. This is the course that brings Tuscany to the sea, reminding us that our territory does not end at the hills. The precision of the rice cookery and the freshness of the ingredients make this course a luminous pause within the journey.
IL BRADO
Pork, onion, whiskey, almonds
The second main course. Tuscan pork is smoked, marinated, and cooked at low temperature: a tribute to the country tradition that never wasted anything, here elevated with whiskey and almonds to create depth and complexity. This is the dish where power meets elegance.
ZOLA
Blue cheese, coffee, chocolate
The finale. A savoury-sweet dessert that closes the circle of the journey: blue cheese, coffee, and chocolate meet in a balance that surprises even the most experienced palates. A conclusion that is not a full stop but an echo — something that lingers on the palate and in the memory, faithful to the menu’s name.

RICORDI can also be experienced through the glass. Our sommelier Michela Bigio, Leonardo’s partner both in life and in this project, has built two wine pairing journeys designed course by course:

- Premium pairing: €60 per person

For those who desire the most complete experience, our ANIMA 7-course tasting menu extends the journey with further signature creations. For our vegetarian guests, the TERRA menu offers an entirely plant-based journey of equal refinement.
The experience at La Sosta del Cavaliere
We serve a maximum of 15 guests per service. This is a deliberate choice: it allows us to dedicate to every table the attention our cuisine demands, to prepare every dish with the same care the Chef dedicates to the first test in the kitchen, to guide every guest through the sensory journey that RICORDI was designed to be.
The restaurant is set within the medieval Borgo of Torri, just a few minutes from Siena, in one of the most evocative corners of the Tuscan countryside. The setting is part of the experience: arriving at La Sosta del Cavaliere already means leaving the noise of the city behind and beginning the journey.
