TERRA is the vegetarian tasting menu of La Sosta del Cavaliere: five courses that tell the story of Chef Leonardo Fiorenzani’s cuisine through the language of the earth. No compromises, no “lightened” versions of other dishes — TERRA is born and lives as a standalone journey, designed to give vegetables, herbs, roots, and pulses the same level of study, technique, and ambition our kitchen dedicates to every signature creation.

Why TERRA is not just another vegetarian menu

In many kitchens, a vegetarian menu is a courtesy: an adapted version, built by removing ingredients from the main dishes. With us, it is the opposite.

TERRA is born from our kitchen garden — cultivated just a few metres from the kitchen — and from a constant dialogue with the small agricultural producers of our territory. Chef Fiorenzani works with seasonal raw materials starting from a precise question: what can this carrot, this radicchio, this chestnut tell us today? The answer becomes a dish.

The result is a plant-based journey that does not give up complexity, depth of flavour, or technique. On the contrary: TERRA is often the menu where the Chef’s creativity expresses itself with the greatest freedom, because vegetable raw materials offer a wider aromatic palette than most people imagine.

Five courses, designed to bring out the Tuscan territory in all its nuances — from the countryside to the kitchen garden, from the undergrowth to ancient flavours.


The tasting journey

FIOR DI CAVOLO

Cauliflower, beetroot, sesame

The opening course. A humble vegetable from the Tuscan countryside tradition is transformed into a chromatic and sensory experience: cauliflower meets the earthy sweetness of beetroot and the toasted note of sesame. A doorway that declares the philosophy of TERRA — starting from what the earth offers to arrive somewhere we have never been.

CAROTA

Carrot, Parmigiano Reggiano, mesclun

Can a carrot be a signature dish? Yes — if you work it as it deserves. The carrot is elevated through different cookings and techniques, accompanied by the deep umami of aged Parmigiano Reggiano and the freshness of mesclun from our local growers. A dish that proves how greatness, often, is born from the simplest of ingredients.

ORIENTE

Tagliolini, vanilla, tea

Chef Fiorenzani’s signature dish. Hand-rolled tagliolini made with toasted barley flour, rested for an entire night, then emulsified with a vanilla butter. On top, a cold infusion of Lake Garda herbal tea and the herb salt from our kitchen garden. At the table, a hot infusion of the same tea is served to cleanse the palate and accompany the course. Vanilla, here, is not a dessert ingredient: it is a spice, capable of giving depth and tension to a pasta dish that breaks every expectation. (This dish is also part of the ANIMA menu, as the only overlap between our tasting journeys.)

RADICCHIO

Chicory, pumpkin, beans

A wintery dish at its core. The radicchio — slightly bitter, crisp, dialectic — meets the deep sweetness of pumpkin and the earthy structure of beans. This is the moment when TERRA becomes most recognisably Tuscan: the flavours of the countryside, of country cooking, of winter among the hills. Tradition, yes — but with a balance built down to the millimetre.

DOLCE FUNGO

Chestnut, carob, mushrooms

The finale. A dessert that draws from the undergrowth and the ancient flavours of Tuscany: chestnut — a sacred fruit of the Apennine tradition — meets carob and an unexpected mushroom note. A dessert that does not behave like a dessert, faithful to the logic of a tasting menu: closing the circle of the journey without breaking its thread, leaving a memory that is not sugar but earth.


Wine pairings curated by Michela Bigio

TERRA can also be experienced through the glass. Our sommelier Michela Bigio has built two wine pairing journeys specifically designed to accompany a plant-based menu, where acidity, minerality, and aromatic tension play a different role than they would in a traditional pairing:

  • Classic pairing: €40 per person
  • Premium pairing: €60 per person

The Chef’s garden and our small producers

TERRA exists because our kitchen garden exists, and because we work exclusively with small agricultural producers from the Siena and broader Tuscan area.

The herb salt that signs several dishes on the menu — ORIENTE above all — is made with herbs cultivated, harvested, and processed by us. The vegetables we do not grow ourselves come from suppliers we know personally: zero-kilometre, here, is not a marketing label but a daily choice that affects sustainability, freshness, and support for the local economy.

When you taste a dish from TERRA, you are tasting a radius of just a few kilometres around the restaurant. This is our idea of terroir.


The experience at La Sosta del Cavaliere

We serve a maximum of 15 guests per service. This is a deliberate choice: it allows us to dedicate to every table the attention our cuisine demands, to prepare every dish with the same care the Chef dedicates to the first test in the kitchen, to guide every guest through the sensory journey TERRA was designed to be.

The restaurant is set within the medieval Borgo of Torri, just a few minutes from Siena, in one of the most evocative corners of the Tuscan countryside. The setting is part of the experience.
